Turkey Fried Rice

This Turkey Fried Rice recipe is a delightful way to recreate your Thanksgiving leftovers.

Ingredients

  • 2 cups leftover turkey
  • ½ cup onions, diced
  • 1 lb bacon, fried and diced
  • 2 eggs
  • 3 cups white rice cooked
  • 2 tablespoons lemon juice
  • 2 tablespoons Yamasa Ramen Broth, Tonkotsu
  • ¼ cup water
  • ½ tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 cup carrot and pea frozen mix

Directions

  1. Cook rice and set out in a cooking sheet to cool.
  2. Meanwhile, make your sauce by combining in a small bowl, Yamasa Tonkotsu Ramen Broth, water, lemon juice and sesame oil. Set aside.
  3. Heat oil in a large wok, skillet or flattop grill over medium high heat for 2 minutes until sizzling and hot. Add onions and olive oil and sauté for 2 minutes until fragrant.
  4. Add diced turkey and bacon, stir to combine, about 1 minute. Move the turkey mixture to one side of the skillet and add eggs to the empty space in the skillet. Stir the eggs until scrambled, about 1 minute. Stir to combine all ingredients together.
  5. Add cooked rice and pre made sauce. Stir well to combine, about 2 minutes. If the rice is not soft enough, add up to ¼ cup of water to soften it.
  6. Add carrots and peas and stir fry for 2 minutes while evenly mixing and distributing the ingredients.
