Teriyaki Veggie Soba

This easy to make, umami packed vegetarian meal is perfect for the whole family.

  • 2 packages soba noodles, fresh or refrigerated
  • 3 tablespoons sesame oil
  • 11 ounces firm tofu, cut in cubes
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • ¼ cup Yamasa Teriyaki Marinade and Sauce
  • 5 cups broccoli florets
  • 1 bunch green onions, sliced
  • 1 whole avocado, sliced
  • 1 tablespoon sesame seeds, toasted
  • 1 tablespoon red pepper flakes


  1. Bring large stockpot of water to a boil. Cook noodles according to the package.
  2. In a large frying pan, on medium-high heat, add 2 teaspoons of sesame oil. Add tofu and cook until golden brown. Add Yamasa Teriyaki Marinade and Sauce and reduce heat. Cook for another minute, until tofu is coated in the sauce.
  3. Increase to medium heat and add sesame oil, garlic, ginger, broccoli florets and green onion. Stir fry for 3-4 minutes or until broccoli is tender.
  4. In 4 bowls, add the noodles and top with tofu mixture. Add slices of avocado. Garnish with sesame seeds and red pepper flakes.
