Sushi Bake

Under 30 minutes and you can have a restaurant quality dinner for a busy weeknight.

Ingredients

  • 3 tablespoons mirin
  • 3 tablespoons granulated sugar
  • 1 tablespoon salt
  • 3 cups cooked white rice
  • 1/2 cup cream cheese softened
  • 1/2 cup mayonnaise
  • 6 ounces canned crab lump meat
  • 8 ounces canned tiny shrimp
  • 1/4 cup cucumber diced
  • 1/4 cup green onion sliced
  • 2 tablespoons yum yum sauce
  • 1/4 cup furikake
  • 1 package nori sheets
  • Yamasa Shoyu for dipping

Directions

  1. In a small bowl add rice vinegar, sugar, and salt. Microwave for about 30-45 seconds. Stir to combine until sugar and salt has dissolved.
  2. Add hot rice to a large bowl. Pour vinegar mixture over the rice. Using a rice spoon, fold the rice until rice is well coated. Set aside to cool completely.
  3. Pre heat oven to 450F.
  4. In another bowl add cream cheese, mayonnaise, crab, cucumber, and green onion. Stir until well combined. 
  5. Once cooled, pour rice mixture into a 9×13 baking dish and spread evenly. Sprinkle half of the furikake over the rice. 
  6. Then layer on the crab mixture. Top the dish with the remaining furikake. 
  7. Place in oven and bake for 10-15 minutes or until the top just starts to brown and bubble. 
  8. Drizzle the yum yum sauce over the dish and serve, optionally serve with a piece of nori.
  9. Dip little bit to Yamasa soy sauce for additional umami flavor!
