Salmon Foil Pack

This is an easy way to wow everyone at the campsite. This fresh and umami loaded meal will be perfect after a day in the sun.

Ingredients

  • 4 teaspoons Yamasa Reduced Sodium Shoyu
  • 1 whole lemon, sliced
  • 4 salmon filets
  • 1 cup carrots
  • ½ cup Flammulina filiformis
  • ½ cup Shimeji mushrooms
  • 8 tablespoons Butter
  • 1 bundle green onions
  • 8 tablespoons olive oil

Directions

  1. Sprinkle a pinch of salt (outside the amount) on each piece of salmon fillet and leave it for 5 to 10 minutes.
  2. Meanwhile, prepare the vegetables by cutting off the stones of the flammulina filiformis and cut the carrots and lemons into thin slices.
  3. Place 2 slices of lemon in a 12 in square of aluminum foil. Add the salmon filet on top of the lemon.  
  4. Pour the 2 tablespoons of the olive oil and 1 teaspoon of Yamasa Reduced Sodium Shoyu in the center of each filet and spread across the top. Add the sliced carrots, mushrooms, and 2 tablespoons of butter on top of the salmon.
  5. Wrap the foil into a pouch around the salmon and vegetables.
  6. Preheat grill then cook on medium high for about 10-15 minutes each side, turning occasionally.
  7. Let the packets cool slightly before serving. Carefully open the packets and serve with toppings of choice.
