Juicy Turkey Brine

This simple, yet delicious recipe will produce the juiciest turkey you have ever served.

  • 2 cups Yamasa Regular Shoyu
  • ¼ cup sesame oil
  • ¼ cup minced ginger
  • 1 cup honey
  • 1 bunch of green onions, chopped
  • 1 cup butter
  • Salt
  • Pepper
  • Garlic powder
  • 3 cups water


  1. In a medium bowl, combine the Yamasa Shoyu, sesame oil, ginger, and honey. Wisk until combined.
  2. Place your turkey in a large pot or bowl and pour the mixture over the turkey.
  3. Let the turkey marinate for 45 minutes, then flip the turkey so the other half is submerged in the brine and marinate for an additional 30minutes.
  4. Preheat the oven or roasting pan to 450 degrees.
  5. Meanwhile, chop the scallions and slice the butter and stuff them both inside the turkey. Season the outside of the turkey with salt, pepper, and garlic powder.
  6. Place the turkey and the 3 cups of water to the roasting pan. Cook for about 70 minutes for a 12 lb turkey or 165-degree internal temperature.
  7. Baste the turkey with the brine every 30 minutes.
