Grilled Bourbon Chicken

Enjoy Grilled Bourbon Chicken breasts marinaded with a mixture of Asian flavors, then grilled for a juicy center and caramelized shell.

Ingredients

  • 2 pounds or 4 boneless, skinless chicken breasts
  • 2 teaspoons Yamasa Reduced Sodium Shoyu
  • 1/4 cup Yamasa Shoyu Ramen Broth
  • 2 tablespoons Yamasa Tonkotsu Ramen Broth
  • 1/2 cup unsweetened apple sauce
  • 1/2 cup finely chopped yellow onion
  • 2 teaspoons grated ginger
  • 4 garlic cloves, minced
  • 1 tablespoon avocado oil
  • 1/3 cup honey bourbon
  • 1/4 cup regular barbeque sauce
  • 1/4 cup honey barbeque sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1/2 cup water
  • 1/4 cup sliced scallions, for garnish

Directions

  1. Place the chicken breasts, 1 at a time, in a Ziploc bag. Pound the chicken breast to an even thickness, being careful not to puncture the bag. Put breasts in the bag.
  2. In a medium bowl, combine the Yamasa Reduced Sodium Shoyu, Yamasa Tonkotsu Ramen Broth, Yamasa Shoyu Ramen Broth, apple sauce, onion, ginger, garlic, oil, bourbon, BBQ sauces, vinegar, brown sugar, and water.
  3. Reserve and refrigerate 1/3 of the marinade and transfer the remainder to the Ziploc bag with the chicken. Refrigerate and marinate  for at least 1 hour or as long as overnight.
  4. Preheat outdoor grill over medium high heat. Discard the marinade in the bag and grill the chicken for 4 minutes per side, or until chicken is cooked through.
  5. Transfer chicken to a plate, tent with foil and allow to rest while you make the sauce.
  6. Put the reserved marinade in a small sauce pan and bring to a boil over medium high heat. Once boiling, reduced heat to medium-low until sauce has thickened slightly, 5 to 6 minutes.
  7. Slice the chicken breast, top with sauce, scallions and serve.
